Dill and potato cakes recipe = DOUGH PLAY fun for infants and toddlers!!!
On a rainy day, your children can't go outdoors, they have got lots of energy bursting within them and all you wish is to bake something that will warm your kitchen with yummy aroma, yet you are not in the mood for sweet stuff and bread proofing takes too long... So what can you do?
Presenting the Dill and potato cake recipe! This is an all in one wonder!!!
Why?
Because you will be able to
1. make soft and malleable dough with your children to have dough play and have fun shaping and using cookie cutters,
2. Bake little cakes that are savory and fragrant when your children are done with dough play!
Yes! A perfect dream come true for a busy and ambitious mum as well as all Early Childhood Educators!
This recipe is taken from the book: Complete baking by Martha Day, but I have modified it to use cream cheese instead of butter and so think of light and fluffy cake in the middle and crispy and golden crust all in one made from potatoes, cream cheese and dill! Best of all, it was the product from the dough play your children had! (So please wash their hands thoroughly before the dough play!)
My daughters enjoyed eating the little cakes after the dough play! I'm also very proud of Tiffany as it is her first dough play and experience using the rolling pin and cookie cutter at 14 months old! I must also add that I'm proud of Trinity as usual for her long attention span in cookery and baking since infanthood!
What joy and satisfaction!
Side notes: making it into thin bite size pieces taste more like a biscuit with a crispy crust. If you like it to taste like a cake, make it thicker and bigger. After it has completely cooled down, it will be soft and a little chewy for the bite sized pieces. We toasted it back and it is crispy and nice again! :)
Ingredients:
225g self raising flour
75g cream cheese
Pinch of salt
A heap of dried dill
170g plain mashed potatoes
2-3 tablespoon milk as required
1. Sift flour into bowl.
2. Add cream cheese, salt, dill.
3. Mix in mash potato and enough milk to knead into a soft malleable dough.
4. Roll out the dough on a well floured surface and have all the dough play with your children.
5. Preheat oven at 230 degree Celsius.
6. When dough play is done, introduce cookie cutters and have fun cutting out fun shapes on the dough that has been rolled out fairly thin.
7. Grease the baking Sheet or use a silicone baking sheet and bake for 10 -12 minutes for bite sized pieces or 20-25 minutes for 3 inch sized cutters.
Enjoy!!!

Garlic prawns angel hair in tomato and chicken broth. Quick recipe under 15 minutes
Sometimes when you get sick and tired of cream pasta and thick tomato sauce pasta, you wish you have other alternatives that are healthier and lighter. That's how I felt today in Sunny Singapore at a scorching 34 degree Celsius.
So I made this quick pasta as I did not want to stay in the kitchen for too long and both my daughters, Trinity and Tiffany loves it and they wiped out their lunch quickly! you can make this pasta within 15 minutes if you prepare your ingredients before hand.
Ingredients
(serves 2 children and 1 adult)
A portion of angel hair
8 Peeled prawns
2 tomatoes sliced into 8 pieces each
1 clove garlic minced
2 small shallots sliced
2 tablespoon olive oil
1 cup Maggi no MSG chicken stock
A pinch of salt (optional)
To garnish:
Freshly cracked pepper
Dried dill
1. Place angel hair in boiling water and cook for one and a half minute. Stirring occasionally. No need to add oil and salt as this will allow pasta to absorb the broth better. Drain well and set aside.
2. Heat wok. Add olive oil.
3. Add shallot and garlic and brown them under low heat.
4. Add prawns and remove from heat when it's cooked.
5. In the same wok with the remaining oil, garlic and shallots, add tomatoes and chicken stock and simmer for 5 minutes.
6. Taste. Add salt if necessary.
7. Add angel hair and prawns. Toss the ingredients well and remove from heat.
8. Garnish with freshly cracked black pepper and dill.

2 ingredients!!! Super easy and yummy Nutella cake!
Mother's day is near and your little ones or yourself would like to bake a cake for mother dearest but you may not want to invest a lot in baking ingredients as you hardly bake or you have ran out of ingredients and it's raining... What should you do? Fret not!
This 2 ingredients Nutella cake will save your day!
All you need is 240g of melted Nutella spread and 4 room temperature eggs!
It is that simple!
However the catch is you need to have a kitchen mixer because you need to whip the eggs till they TRIPLE in volume. So room temperature eggs helps to whip up the volume easier and melted nutella ensures easier mixing.
My 2 daughters Trinity and Tiffany enjoyed the process and I hope you and your little ones will enjoy it!
I have also made a YouTube video on it and I serve with vanilla ice cream and fresh berries. Click on the YouTube box on the right of my website (website view) to see the video!
The taste?
It doesn't have any nutella taste. It taste like a mud cake, like a rich chocolate cake. Fudgey in the middle and spongey on the outside. It has very good texture and taste which my family found it quite hard to believe that only nutella and eggs were used. The cake is not as sweet as eating nutella straight from the tub. And it is just nice in proportion. So go ahead! Give it a try!
Ingredients
240g melted nutella
4 room temperature eggs
Optional serving suggestion:
ice cream
Fresh berries
Necessary equipments n tools
Kitchen stand Mixer
Greased cake pan
1. Preheat your oven at 180 degree Celsius.
To melt nutella if you have not done so, place nutella in a heatproof bowl over boiling water and stir till melted. This method is known as a double boiler.
2. Crack the 4 eggs and whip over medium speed for 5-10 minutes until volume triples.
3. Fold in the whipped eggs 1/3 at a time until totally combined.
4. Pour the cake batter into the greased cake pan and drop it a few times to minimize the air bubbles.
5. Bake for 30 minutes or longer until a wooden skewer can be pierce through clean without any wet batter.
6. Cool down and remove from pan.
7. Serve with ice cream and fresh berries and surprise your mum this mother's day!
