Savoury spring rolls

Simple fillings for spring rolls which are addictive. One of each is definitely not enough! If you are preparing for a party, make sure you make lots and lots of it! 
The healthy twist in eating these shallow fried delights is to wrap them in lettuce and cucumber and provide extra fibre and crunch. I made about 30 of them and they got wiped out within minutes by my family and I. Absolutely simple but delicious!

Avocado rolls


Ingredients
Avocado roll filling:
Diced avocado
Finely chopped shallots 
A dash of salt and pepper
A dash of cayenne pepper
A dash of dill
Combine and set aside.

Muah  Otah is an Asian seafood fillet that is slightly spicy and very flavorful. Usually made with fish, but I got the one that has prawn in it as well. Besides using it for spring rolls, it goes really well with Nasi Lemak, a malay coconut infused rice served with peanuts, fish and otah, as well as in buns, or to use as as a filling for omelette.

New moon brand  muah otak , steamed and sliced thickly.


Cheese frankfurter rolls 


filling:
cheese frankfurters steamed.
 Slice each frankfurter into 3 equal parts. 



Points to note:
 
1. To seal the spring roll fillings, make sure the spring roll sheets have been fully defrosted to prevent breakage. 

2. To seal the wrappers, have some corn starch mixed with water to make a thick solution. 
3. Use healthier oil such as Soya bean oil or rice bran oil for shallow fry till golden brown. 
4. Wash and prepare Lettuce and Japanese cucumber for wrapping the spring rolls.

Steps: 

1. Wrap the fillings in the wrappers and seal up with corn starch.
2. Heat wok in medium heat Until oil is hot.
3. Shallow fry placing the rolls with the sealed ends facing down to prevent the filling from coming out. 
4. Shallow fry both sides till golden brown.
5. Drain oil and serve with Lettuce and cucumber.

Satay buns on stick!

This idea came to my mind one day when I had craving for bread and satay. I did not want to go through the hassle of making my own satay so I got a Fairprice brand ready to grill No MSG chicken satay and it tasted good! 

We have also tried the beef satay and loved it as well but it is not really suitable  for bread making as it is tougher to bite. 

Overall this is a very successful recipe and idea so we hope you will have fun making it as well!

Ingredients for 6 buns:

Ingredients A:
180g bread flour
120g cake flour
4g salt (I use sea salt)
4g instant yeast 

Ingredients B:
210g of 1 beaten egg yolk + fresh milk

Ingredients C:
20g unsalted butter (I use French butter. I love it and it melts so quickly!) 

Ingredients D:
6 sticks of satay grilled in advance
Powdered peanuts to sprinkle  

1. Mix ingredients A.
2. Microwave ingredients B on 30 seconds at 700w
3. Combine ingredients A+B and knead till well combined.
4. Add ingredient C and knead at high speed for 20 minutes.
5. Transfer and Cover with cling wrap and proof for 30-40 minutes or until size doubled. 
6. Punch out the air and transfer to a working mat. 
7.roll it flat from middle outwards in one direction, avoid rolling back and forth.
8. Slice into 6 portions length wise and roll them into ropes.
9. Refer to the picture below to see how to roll the buns. 

10. Proof for a second time until double in size, 30-40 minutes.
11. At the same time, preheat your oven at 180 deg C.
12. Apply left over egg white as egg wash and sprinkle peanut powder lavishly.
13. Bake for 15 minutes until the satay stick can piece through and emerge clean. 
14. Enjoy!
