川贝雪梨蜜 double-boiled Chuan Bei and Pear

This original recipe is from the book Sweet Indulgence, health and beauty by Chef Peter Tsang. In Sunny Singapore, this recipe is perfect for us as it can:
-Moistens the lungs
-Stop coughs
-Dissolves phlegm
-Reduces swelling

However, 川贝 Chuan Bei (Fritillaria Bulb) is not suitable for people with weak spleen and stomach or those who suffers from cold coughs.

You can use either 鸭梨 fragrant pear or the huge nan shui pears that I've used.
Please remember to remove the core from the pear using a small knife or a teaspoon to dig the core to eliminate bitterness.

Serve cold, this is a cooling and yummy dessert for a warm afternoon or after meals.

Ingredients:
2 nam shui pears o
400ml water
150g rock sugar
10g Chuan Bei (pounded)
5g dried Longan
Optional: 5g 南北杏 sweet and bitter apricot kernels (which can dissolve phelgm as well)

1. Peel pears, slice the tops and use a small knife or teaspoon to dig and remove cores.
2. Place pears followed by rock sugar, pounded Chuan Bei, dried Longan, sweet and bitter apricots and water.
3. Double boil for 1 hour. *Alternatively, place in a regular pot on high heat till boiling, till reduce heat to low and simmer for 1 hour.*
4. Remove from heat and cool down then chill in the fridge before eating.

Tempura Cereal Prawns

Imagine crispy prawns in yummy crunchy cereal plus deep fried curry leaves. So yummy isn't it. You can never stop at 1!

Ingredients:
500g Tails on Frozen large prawns or fresh large prawns
100g Nissin Tempura flour (the best!!!)
160ml cold water
5 tablespoon Nestum Cereal
1 tablespoon milk powder
1 tablespoon sifted icing sugar
Curry leaves
Chili padi

Tempura prawns
1. Mix tempura flour with cold water
2. Dip prawns in flour mixture
3. Deep fry at 160 deg Celsius till golden brown
4. Drain oil and set aside
5. Deep fry curry leaves at 160 degree Celsius for 1-2 minutes or until leaves turn translucent and crispy. Avoid placing it too long as it will brown and turn bitter.

Cereal
1. Combine cereal, milk powder and sugar and mix well.
2. Stir fry in low heat till warm and set aside

Presentation:
Place tempura prawns on plate, followed by cereal and curry leaves and garnish with chili padi if desired.

Fried wonton noodles

My family loves fried wontons. We would usually eat about 6-7 wontons per person! We also love the chewy hong kong style noodles to go along with it. You can use spinach noodles as well! In this recipe, I used a variety of condiments to make my noodle sauce and it's very successful!

1 pack of Round Wonton wrappers
2 beaten egg yolks to seal wontons
Fillings and marinate:
500g Minced meat
4 Diced chestnuts
100g Diced prawns
1 1/2tablespoon light soy sauce
1/2 tablespoon sesame oil
3 teaspoons of corn starch
2 egg whites
A dash of pepper

Fortune brand hong kong style noodles
1 bowl of water with ice.
1 big metal sieve
Noodle sauce for 5 persons (to prepare in advance):
5 tablespoon shallot oil( pan fry shallots on low heat till fragrant to get shallot oil)
2 tablespoon light soy sauce
2 teaspoon oyster sauce
2 teaspoon dark soy sauce
2 teaspoon sesame oil
50ml of warm water
Please taste it and adjust accordingly.
Optional:
AAA brand crispy prawn chili
Scalded Kailan or other vegetables
to your liking.

1. Combine wonton fillings and marinate at least 1 hour.
2. Seal wontons and set aside.
3. Deep fry at 140-160 deg Celsius. Flip to ensure both surfaces are fried well. It took about 2-3 minutes for 7 wontons.
4. Drain oil well and set aside.
5. Loosen a clump of noodles (1 serving) so that the strands doesn't stick.
6. In boiling water, place noodles and use chopsticks to continuously stir for 30 seconds. Turn down to low heat to prevent water overflowing due to reaction with noodles.
7. After 30 seconds, sieve the noodles and stir noodles in icy water for 5 seconds before placing back in hot water for 5 seconds and drain.
8. Place 3 tablespoons of sauce (and chili if needed) and toss the noodles well.
9. Add vegetables and fried wontons and you are ready to dig in!

Soup dumplings option:
Place dumplings in boiling water for 3 minutes or until cooked. :)
