Savoury spring rolls

Simple fillings for spring rolls which are addictive. One of each is definitely not enough! If you are preparing for a party, make sure you make lots and lots of it! 
The healthy twist in eating these shallow fried delights is to wrap them in lettuce and cucumber and provide extra fibre and crunch. I made about 30 of them and they got wiped out within minutes by my family and I. Absolutely simple but delicious!

Avocado rolls


Ingredients
Avocado roll filling:
Diced avocado
Finely chopped shallots 
A dash of salt and pepper
A dash of cayenne pepper
A dash of dill
Combine and set aside.

Muah  Otah is an Asian seafood fillet that is slightly spicy and very flavorful. Usually made with fish, but I got the one that has prawn in it as well. Besides using it for spring rolls, it goes really well with Nasi Lemak, a malay coconut infused rice served with peanuts, fish and otah, as well as in buns, or to use as as a filling for omelette.

Cheese frankfurter rolls

 Slice each frankfurter into 3 equal parts. 



Points to note:
 
1. To seal the spring roll fillings, make sure the spring roll sheets have been fully defrosted to prevent breakage. 

2. To seal the wrappers, have some corn starch mixed with water to make a thick solution. 
3. Use healthier oil such as Soya bean oil or rice bran oil for shallow fry till golden brown. 
4. Wash and prepare Lettuce and Japanese cucumber for wrapping the spring rolls.

Steps: 

1. Wrap the fillings in the wrappers and seal up with corn starch.
2. Heat wok in medium heat Until oil is hot.
3. Shallow fry placing the rolls with the sealed ends facing down to prevent the filling from coming out. 
4. Shallow fry both sides till golden brown.
5. Drain oil and serve with Lettuce and cucumber.

Savory ham & cheese petite pancakes for little hands

Pancakes are a hit among children usually. Instead of making it sweeter by adding golden syrup, why not try a savory version by adding honey shaved ham and sliced cheddar cheese? Honey shaved ham also make a better option than regular sliced ham as a thinner slice is used, making it lesser in sodium without compromising in taste as the texture of shaved ham is light and the taste of honey shaved ham with a choice meat cut is better than the regular picnic ham which is made of put anything but real meat, hence the price difference. You could also try using sliced turkey breast at the deli, whichever that works!
The brand of pancake mix used is morinaga. It uses wheat flour and produces really fluffy pancakes. The fluffiness makes it good for making this savory pancakes as the filling is hidden in the pancake itself.
Also, use a piping bag or a squeeze bottle to make it easier to create round petite bite sizes. My elder daughter loves these in her lunch box and I hope your children love it too! For my little daughter, I made them plain or you could add fresh berries and serve with applesauce.

Ingredients
150g Morinaga pancake mix
1 medium size egg
100ml full cream milk
Honey shaved ham diced
President sliced cheddar for burgers diced

First prepare pancake batter by whisking flour, milk and egg and spoon the mixture into a squeeze bottle or piping bag.
1. Heat happy call pan or non stick pan on low heat for 2 minutes.
2. Squeeze bite size round pancake batter on to pan.
3. Place ham and cheese in the middle of each pancake batter.
4. Squeeze more batter just to cover the fillings.
5. Wait till you see the batter is cool through then flip over.
6. Off the fire and let the remaining heat cook the pancake.
7. Now it's really to serve! Enjoy!

For young children, you may place sliced berries as fillings and serve with applesauce.

Super easy party pleaser nachos

Christmas is coming! (Yes, as you can tell I am in the Christmas mode!)
And one easy snack that will keep your guests wanting for more would be nachos! These nachos are tangy, cheesy and crispy! Served in natural Greek style yoghurt, it's a healthier dip away!

Ingredients:
Nacho:
White corn nachos( Tostinos or mission brand)
Shredded Cheddar cheese
Shredded Mozzarella cheese
Diced canned pineapples and rambutans
Dried dull
Dip:
Greek style natural yoghurt sprinkle with Spring onions

1. Place nachos on baking paper.
2. Place diced pineapple and rambutans on nachos.
3. Cover with shredded cheeses.
4. Sprinkle dried dill.
5. Bake till golden brown for 5-8 minutes at 200 degree Celsius.
